Picante chicken
Ingredients/Components
- salt - 1/2 tsp
- oil - 1 Tbsp
- cloves garlic, minced - 3 item
- sage - 2 3
- bay leaf - 1 item
- onion, chopped - 1 item
- dry vermouth - 1/4 c
- cumin - 2 tsp
- picante sauce
- tomato, seeded and chopped - 1 item
- red pepper, cut into 1/2-inch strips - 1 item
- green pepper, cut into 1/2-inch strips - 1 item
- cans pinto beans or kidney beans - 2 item
- to 4 chicken breasts, cut into 1-inch strips - 3 item
How to make picante chicken:
Cook onion and garlic in oil in a large saucepan for about 4 minutes. Stir in chicken; cook until no longer pink. Sprinkle sage and salt over chicken; cook and stir 1 minute. Stir in picante sauce, beans, vermouth and bay leaf. Bring to a boil, reduce heat and simmer 10 minutes. Stir in peppers and tomato; simmer for 10 minutes. Discard bay leaf. Serve in bowl.
