Ingredients/Components

  • salt - 1/2 tsp
  • oil - 1 Tbsp
  • cloves garlic, minced - 3 item
  • sage - 2 3
  • bay leaf - 1 item
  • onion, chopped - 1 item
  • dry vermouth - 1/4 c
  • cumin - 2 tsp
  • picante sauce
  • tomato, seeded and chopped - 1 item
  • red pepper, cut into 1/2-inch strips - 1 item
  • green pepper, cut into 1/2-inch strips - 1 item
  • cans pinto beans or kidney beans - 2 item
  • to 4 chicken breasts, cut into 1-inch strips - 3 item

How to make picante chicken:

Cook onion and garlic in oil in a large saucepan for about 4 minutes. Stir in chicken; cook until no longer pink. Sprinkle sage and salt over chicken; cook and stir 1 minute. Stir in picante sauce, beans, vermouth and bay leaf. Bring to a boil, reduce heat and simmer 10 minutes. Stir in peppers and tomato; simmer for 10 minutes. Discard bay leaf. Serve in bowl. Top with shredded cheese and sour cream. Serve with chips.
