Ingredients/Components

  • salt - 1/2 tsp
  • oil - 3 Tbsp
  • cornmeal - 2 Tbsp
  • cloves garlic, minced - 2 item
  • chili powder - 3 Tbsp
  • oregano - 2 tsp
  • onion, chopped - 1 item
  • ground pepper - 1 item
  • cumin - 1/2 tsp
  • lean beef, cubed - 2 lb
  • water or 1 c - 2 c
  • canned, chopped green chili peppers - 1 item

How to make chili con carne:

Brown meat in hot oil and set aside. Saute onion and garlic in same pot. Add more oil, if needed. Return meat to pot. Add all remaining ingredients, except chili peppers and cornmeal. Cover and simmer over low heat until meat is tender and liquid is reduced (2 to 3 hours). Add cornmeal to thicken, if needed. Add chili peppers. Cook 10 minutes.

Pinto beans and flour tortillas are great with this dish. You can add the beans to the chili, if desired. When adding the chili peppers, recommend the mild peppers first. The longer the chili peppers are cooked into the chili, the hotter the chili will become.

I learned this recipe from the late Dr. Paul Grosser, a Political Science professor at LSU. He learned it while teaching at the University of Texas at El Paso from a Mexican friend. This is a Mexican chili and does not normally have beans, though they can be added, if desired.
