Ingredients/Components

  • milk - 3/4 c
  • vanilla extract - 3/4 tsp
  • butter - 2 Tbsp
  • pecan halves
  • sugar, divided - 3 c

How to make pecan pralines:

In a large saucepan, combine 2 cups sugar and milk. Cook on low heat.

Meanwhile, place remaining sugar in another saucepan on low heat. Stir until sugar melts. Pour and stir melted sugar slowly into milk and sugar mixture that should be almost to boiling point. Cook slowly to firm ball stage (when small amount of mixture dropped into cold water forms a firm ball or candy thermometer reaches 242° to 248°). Remove from heat. Add vanilla and butter; beat until mixture starts to thicken. Stir in pecans. Drop small spoonfuls onto waxed paper. Pralines "set" immediately. Yields 2 1/2 dozen.
