Pasta with eggplant sauce
Ingredients/Components
- salt - 1 tsp
- oil - 5 Tbsp
- pepper - 1/4 tsp
- medium onion - 1 item
- basil - 1 tsp
- can tomatoes - 1 oz
- clove garlic, peeled - 1 item
- small eggplant - 1 item
- green bell peppers - 2 item
How to make pasta with eggplant sauce:
Peel and dice onion. Seed bell peppers and cut into 1/2-inch squares. Pare eggplant and cut into 1/2-inch cubes. Heat oil in large skillet over medium heat. Add onion and peppers and stir to coat with oil. Add eggplant and tomatoes. Cook, stirring frequently, over very high heat until starting to brown (about 5 minutes). Crush garlic with tines of fork and add to sauce. Season with salt and pepper. Cook, covered, over medium heat 4 to 5 minutes. Add basil and remove from heat. Cook and drain pasta (ziti) well and add eggplant sauce. Mix and serve hot. Serves 4.Recipe categories: Pasta, Very low carbs, Pasta, rice and grains.
