Ingredients/Components

  • cloves garlic, minced - 2 item
  • Parmesan cheese - 2 Tbsp
  • fettucine - 4 oz
  • olive oil - 1 Tbsp
  • finely chopped onion - 1/3 c
  • medium tomato, seeded and chopped - 1 item
  • can artichoke hearts, rinsed and drained - 1 item
  • snipped fresh basil or 2 tsp - 1/4 c
  • medium red or green sweet peppers, chopped - 2 item

How to make pasta with artichokes and basil:

Cook pasta according to package directions. Stir artichokes, peppers, onion and garlic in oil until tender. Stir in tomato and basil until heated through. Add mixture to pasta; toss gently to mix. Sprinkle with Parmesan cheese. Makes 4 to 6 side dish servings.
