Pasta with artichokes and basil
Ingredients/Components
- cloves garlic, minced - 2 item
- Parmesan cheese - 2 Tbsp
- fettucine - 4 oz
- olive oil - 1 Tbsp
- finely chopped onion - 1/3 c
- medium tomato, seeded and chopped - 1 item
- can artichoke hearts, rinsed and drained - 1 item
- snipped fresh basil or 2 tsp - 1/4 c
- medium red or green sweet peppers, chopped - 2 item
How to make pasta with artichokes and basil:
Cook pasta according to package directions. Stir artichokes, peppers, onion and garlic in oil until tender. Stir in tomato and basil until heated through. Add mixture to pasta; toss gently to mix. Sprinkle with Parmesan cheese. Makes 4 to 6 side dish servings.Recipe categories: Low cholesterol, Low sodium, Low fat.
