Italian Coating:2/3 c. all-purpose flour1 Tbsp. Italian seasoning1 1/2 tsp. paprika1 1/4 tsp. salt1/2 tsp. garlic powder1/4 tsp. pepper Mexican Coating:1/2 c. all-purpose flour2 Tbsp. cornmeal1 to 2 Tbsp. chili powder1 1/2 tsp. paprika1 1/4 tsp. salt1/4 tsp. pepper Parmesan Coating:1/2 c. grated Parmesan cheese1/3 c. all-purpose flour1 1/2 tsp. paprika1 tsp. salt1/4 tsp. pepper Pecan Coating:1/2 c. all-purpose flour1/2 c. ground pecans1 tsp. paprika1/4 tsp. pepper Sesame Herb Coating:2/3 c. all-purpose flour2 Tbsp. sesame seed2 tsp. dried thyme2 tsp. sage2 tsp. parsley flakes1 1/2 tsp. paprika1 1/4 tsp. salt1/4 tsp. pepper Heat oven to 425°. Mix desired coating for chicken. Using 2 1/2 to 3 1/2 pounds chicken, cut into desired size pieces. Coat with coating mix and place in 13 x 9 x 2-inch baking pan, skin side down. Bake uncovered until done.Broiler Fryer: 35 minutes, turn, bake 15 minutes longer.
Breast halves: 30 minutes, turn, bake 15 minutes longer.
Drumsticks: 45 minutes, turning several times during baking.
