New england clam chowder
Ingredients/Components
- milk - 2 c
- salt - 1 tsp
- boiling water - 1 c
- light cream - 1 c
- pepper - 1/4 tsp
- large onion, finely chopped - 1 item
- medium potatoes, diced - 3 item
- salt pork, diced - 1/4 lb
- cans clams, minced - 2 oz
How to make new england clam chowder:
Fry salt pork in skillet until brown and crisp; remove and drain. Saute onions in remaining fat until golden brown and clear. Add water, potatoes, salt and pepper. Cover and simmer until potatoes are tender. Add clams with liquid; heat. Add milk and cream, season to taste. Simmer until ready to serve. Do not boil! Serve in bowls topped with salt pork.
