Ingredients/Components

  • milk - 2 c
  • salt - 1 tsp
  • boiling water - 1 c
  • light cream - 1 c
  • pepper - 1/4 tsp
  • large onion, finely chopped - 1 item
  • medium potatoes, diced - 3 item
  • salt pork, diced - 1/4 lb
  • cans clams, minced - 2 oz

How to make new england clam chowder:

Fry salt pork in skillet until brown and crisp; remove and drain. Saute onions in remaining fat until golden brown and clear. Add water, potatoes, salt and pepper. Cover and simmer until potatoes are tender. Add clams with liquid; heat. Add milk and cream, season to taste. Simmer until ready to serve. Do not boil! Serve in bowls topped with salt pork. Serves 6.
