  • milk - 1 c
  • salt - 1 tsp
  • flour - 2 Tbsp
  • butter - 2 Tbsp
  • light cream - 1 c
  • paprika - 1/8 tsp
  • pepper - 1/4 tsp
  • to 10 new potatoes, boiled - 8 item
  • minced chives or parsley - 2 Tbsp

How to make creamed new potatoes:

Peel the potatoes and dice. Melt the butter. Remove from heat and blend in flour until smooth. Return to heat; add milk and cream, stirring constantly, until thickened. Season with salt and pepper. Add the diced potatoes and chives or parsley and heat through. When ready to serve, sprinkle with paprika. Makes 4 to 6 servings.
