  • cinnamon - 2 tsp
  • eggs - 2 item
  • granulated sugar - 2 c
  • vanilla extract - 1 tsp
  • salt - 1/2 tsp
  • water
  • baking soda - 1 tsp
  • vegetable oil - 1 c
  • all-purpose flour - 2 c
  • powdered sugar - 2 Tbsp
  • chopped nuts walnuts, pecans, etc - 1 c
  • apples, peeled, cored and coarsely chopped about 4 medium apples; Granny Smith works best - 4 c

How to make new england apple cake:

In a large bowl, beat together the eggs, sugar, oil and vanilla until smooth. Blend together flour, cinnamon and salt. Add flour mixture to egg mixture, blending well. Dissolve baking soda in water. Add to batter. Combine well. Add nuts and apples; combine well. Batter will be very thick. Spoon batter into greased 9 x 13-inch baking pan. Bake at 350° for about 55 minutes or until toothpick inserted in center comes out clean. Cool in pan. Dust with powdered sugar when completely cool.

This cake can be stored up to 2 days at room temperature and up to 2 weeks in the refrigerator. Serves 18.
