  • oil - 1 Tbsp
  • celery, chopped - 1/2 c
  • green pepper, chopped - 1/2 c
  • onion, chopped - 1/2 c
  • fresh mushrooms, sliced - 1/2 c
  • clove garlic, minced - 1 item
  • oregano - 3/4 tsp
  • thyme - 1/4 tsp
  • salt - 1/4 tsp
  • pepper - 1/8 tsp
  • barley uncooked - 1 1/2
  • vegetable broth
  • water
  • 3/4 c - 3 oz

How to make mushroom-barley casserole:

In a large skillet, heat oil over medium-high heat. Add celery, green pepper, onion, mushrooms, garlic and seasonings. Saute 5 minutes until tender. Spoon into a 1 1/2-quart casserole. Stir in barley and mix well. Add broth and water. Cover and bake 1 1/4 hours until barley is tender. Stir occasionally. Raise temperature to broil. Uncover casserole. Add cheese to the top. Broil 3 inches from heat for about 3 minutes and serve.
