Mushroom-barley casserole
Ingredients/Components
- oil - 1 Tbsp
- celery, chopped - 1/2 c
- green pepper, chopped - 1/2 c
- onion, chopped - 1/2 c
- fresh mushrooms, sliced - 1/2 c
- clove garlic, minced - 1 item
- oregano - 3/4 tsp
- thyme - 1/4 tsp
- salt - 1/4 tsp
- pepper - 1/8 tsp
- barley uncooked - 1 1/2
- vegetable broth
- water
- 3/4 c - 3 oz
How to make mushroom-barley casserole:
In a large skillet, heat oil over medium-high heat. Add celery, green pepper, onion, mushrooms, garlic and seasonings. Saute 5 minutes until tender. Spoon into a 1 1/2-quart casserole. Stir in barley and mix well. Add broth and water. Cover and bake 1 1/4 hours until barley is tender. Stir occasionally. Raise temperature to broil. Uncover casserole. Add cheese to the top.
