Ingredients/Components
- salt
- water
- oil - 1/4 c
- pepper - 1/4 tsp
- clove garlic, minced - 1 item
- chopped onion - 1 c
- thinly sliced carrots - 2 item
- cans tomato paste - 2 oz
- elbow macaroni - 1 c
- chopped cabbage - 1 c
- celery, sliced thin - 1 c
- , drained - 1 can
- rosemary optional - 1/2 tsp
- chopped parsley fresh or dried - 4 tsp
- can kidney beans juice and all - 1 oz
How to make minestrone soup:
Cook first 5 ingredients until soft. Stir in next 3 ingredients. Add next 5 ingredients. Bring to a boil. Reduce heat and simmer 1 hour, then add last 3 ingredients. Cook 20 to 30 minutes longer. Makes a big pot of soup.Recipe categories: Vegetables, Soups & stews, Italian.
