  • pkg - 1 oz
  • salt - 2 tsp
  • water - 10 c
  • oil - 1/2 c
  • pepper - 1/4 tsp
  • clove garlic, minced - 1 item
  • chopped onion - 2 c
  • chopped fresh parsley - 4 Tbsp
  • chopped celery - 1 c
  • bay leaf - 1 item
  • can tomato paste - 1 oz
  • elbow macaroni - 1 c
  • beef bouillon cubes - 2 item
  • carrots, thinly sliced - 3 item
  • coarsely chopped cabbage - 1 c
  • can kidney beans, washed and drained - 1 lb
  • sage or 1/2 tsp - 1/8 tsp

How to make minestrone soup:

Heat oil in a large pot. Add garlic, onion, celery and parsley. Cook until soft. Stir in tomato paste and next 8 ingredients. Mix well and bring to a boil. Lower heat, cover and simmer slowly 1 1/2 hours. Add remaining ingredients. Cook 10 to 15 minutes more until macaroni is tender. Makes 8 servings. Can serve with Parmesan cheese on top.
