Ingredients/Components
- salt - 2 tsp
- water - 9 c
- pepper - 1/4 tsp
- clove garlic, minced - 1 item
- grated Parmesan cheese - 1 item
- chopped onion - 2 c
- chopped celery - 1 c
- sage - 1/8 tsp
- olive oil - 1/2 c
- tomato paste - 6 oz
- chopped parsley - 4 Tbsp
- elbow macaroni - 1 c
- chopped cabbage - 1 c
- beef broth
- can kidney beans - 1 item
- green beans - 1 c
- medium potatoes, diced - 4 item
- carrots, sliced thin - 2 item
- small cans chi-chi beans - 2 item
How to make minestrone soup:
Heat oil in a large pot. Add garlic, onion, celery and parsley. Cook until soft. Add tomato paste and next 8 ingredients. Mix well. Bring to a boil, cover and simmer 1 hour. Add beans and macaroni.
