Ingredients/Components
- pkg - 1 oz
- oil - 1 Tbsp
- chicken broth - 1 c
- small onion, chopped - 1 item
- small green pepper, diced - 1 item
- shredded cheese - 1/4 c
- mild salsa - 1 c
- original Minute rice
How to make mexican rice:
Cook and stir pepper and onion in hot oil in saucepan until tender, but not browned. Add corn, salsa and broth; bring to boil. Stir in rice; cover. Remove from heat. Let stand 5 minutes. Add cheese; fluff with fork. Makes 8 servings.Recipe categories: Side dish, Cheese, Rice.
