  • cornmeal
  • buttermilk
  • vegetable oil - 1/2 c
  • can creamed corn - 1/2 item
  • diced bell pepper - 1/2 c
  • diced jalapenos - 1/4 c
  • hot sauce Texas Pete - 1/2 Tbsp
  • eggs - 2 item
  • grated cheese - 1 c
  • pimentos - 2 Tbsp
  • flour self-rising - 3 Tbsp
  • baking powder - 1 tsp
  • cracklings optional - 1 c

How to make mexican cornbread:

Blend all together on medium-high for 2 minutes or until well blended. Grease pan very well. Bake at 375° for 25 to 30 minutes until brown.
