Ingredients/Components

  • eggs - 2 item
  • salt - 1/2 tsp
  • soda - 1/2 tsp
  • buttermilk - 1 c
  • medium onion, chopped - 1 item
  • Wesson oil - 1/2 c
  • grated sharp cheese - 1 c
  • small can cream-style corn - 1 item
  • small can mild green chilies, chopped - 1 item
  • cornmeal, coarsely ground - 1 c

How to make mexican cornbread:

Mix all ingredients except cheese and pour half of mixture into slightly greased hot iron skillet. Add cheese, then remaining batter. Bake at 425° for 25 minutes. May serve as spoon bread. The green chilies are the green Mexican type, not the hot ones.
