Mexican cornbread
Ingredients/Components
- eggs - 2 item
- salt - 1/2 tsp
- soda - 1/2 tsp
- buttermilk - 1 c
- medium onion, chopped - 1 item
- Wesson oil - 1/2 c
- grated sharp cheese - 1 c
- small can cream-style corn - 1 item
- small can mild green chilies, chopped - 1 item
- cornmeal, coarsely ground - 1 c
How to make mexican cornbread:
Mix all ingredients except cheese and pour half of mixture into slightly greased hot iron skillet. Add cheese, then remaining batter. Bake at 425° for 25 minutes. May serve as spoon bread.
