Mexican corn bread
Ingredients/Components
- eggs - 2 item
- salt - 1 tsp
- buttermilk - 1 c
- baking powder - 3 tsp
- salad oil - 2/3 c
- grated Cheddar cheese - 1 c
- can cream-style corn - 1 lb
- corn meal
- jalapeno peppers, chopped - 3 item
How to make mexican corn bread:
Mix all ingredients except cheese in order listed. Pour half the batter into greased deep 9-inch square baking dish. Sprinkle with half the cheese. Add remaining batter. Cover with remaining cheese. Bake in preheated 350° oven for 45 minutes or until done.Note: One can whole green chilies (drained and chopped) may be substituted for jalapeno peppers.
