  • eggs - 2 item
  • salt - 1 tsp
  • buttermilk - 1 c
  • baking powder - 3 tsp
  • salad oil - 2/3 c
  • grated Cheddar cheese - 1 c
  • can cream-style corn - 1 lb
  • corn meal
  • jalapeno peppers, chopped - 3 item

How to make mexican corn bread:

Mix all ingredients except cheese in order listed. Pour half the batter into greased deep 9-inch square baking dish. Sprinkle with half the cheese. Add remaining batter. Cover with remaining cheese. Bake in preheated 350° oven for 45 minutes or until done.

Note: One can whole green chilies (drained and chopped) may be substituted for jalapeno peppers.
