- chicken broth - 1 c
- shredded Cheddar cheese - 1/2 c
- small onion, chopped - 1 item
- mild salsa - 1 c
- small green pepper, chopped - 1 item
- instant rice
- boneless skinless chicken breasts, cubed - 1 lb
How to make mexican chicken and rice:
Heat oil on medium-high and add chicken, onion and pepper. Cook and stir until chicken is cooked through. Add corn, broth and salsa. Bring to a boil and stir in rice; cover. Remove from heat and let stand 5 minutes. Fluff with fork and sprinkle with cheese; cover. Let stand 2 minutes or until cheese melts.Recipe categories: < 60 mins, North american, Mexican.
