Ingredients/Components

  • sugar - 1 2
  • salt - 1 Tbsp
  • water - 1 c
  • vinegar - 1 qt
  • dry mustard - 2 Tbsp
  • chopped onions - 1 c
  • celery seed - 1 Tbsp
  • mustard seed - 1 Tbsp
  • turmeric - 1 Tbsp
  • cut corn about 1 1/2 doz - 2 qt
  • chopped cabbage about 1 small head - 1 qt
  • chopped sweet red peppers about 2 medium - 1 c
  • chopped sweet green peppers about 2 medium - 1 c

How to make corn relish:

To prepare corn, boil 5 minutes. Cut from cob. Combine with remaining ingredients and simmer 20 minutes. Bring to boiling. Pack, boiling hot, into sterilized Ball jars, leaving 1/8-inch headspace. Adjust caps. Yield: About 6 pints.
