Ingredients/Components

  • sugar - 1/2 tsp
  • cider vinegar - 1/2 c
  • salt and pepper to taste - 1 item
  • oregano - 1 tsp
  • olive oil
  • bunch green onions, chopped - 1 item
  • clove garlic, chopped - 1 item
  • sweet basil - 1 tsp
  • small can black olives, drained - 1 item
  • head cauliflower, cut into bite size pieces - 1 item
  • bunch broccoli, cut into bite size pieces - 1 item
  • medium tomatoes, cut into eighths - 3 item
  • fresh mushrooms, sliced or small bite size - 1/2 lb
  • soy sauce may use low sodium sauce - 1/4 c

How to make marinated vegetable salad:

Marinade:1 c. olive oil1 clove garlic, chopped1/2 c. cider vinegar1/4 c. soy sauce (may use low sodium sauce)1/2 tsp. sugar1 tsp. oregano1 tsp. sweet basil salt and pepper to taste Combine the salad ingredients.

Marinade: Combine the ingredients. Marinate the salad ingredients in the marinade overnight.

This is a heart-smart recipe if you use the low sodium soy sauce.
