Marinated carrots
Ingredients/Components
- sugar - 3/4 c
- salt - 1 tsp
- cider vinegar - 3/4 c
- salad oil - 1/2 c
- pepper - 1/4 tsp
- prepared mustard - 1 tsp
- green pepper, chopped - 1 item
- large onion, chopped - 1 item
- can tomato soup, undiluted - 1 3/4
- carrots, pared and sliced into 1-inch lengths about 5 c - 2 lb
How to make marinated carrots:
Bring carrots with water to cover to a boil for 5 minutes. Drain and cool. In a medium bowl, add salt, pepper and mustard. Beat in a little of the oil to blend with mustard. Add balance of oil, sugar, vinegar and soup. Beat to blend. Stir in onion and green pepper. Cover tightly and chill overnight. Makes 12 to 16 servings.Any marinade leftover may be refrigerated and used as a dressing for salad greens.
