Ingredients/Components

  • eggs - 5 item
  • milk - 1 c
  • salt - 1 tsp
  • flour - 1 c
  • Ricotta
  • garlic powder - 2 tsp
  • bread crumbs - 1/2 c
  • salt and pepper to taste - 1 item
  • pinch of cinnamon - 1 item
  • Let stand for 1 hour
  • grated Romano cheese to taste - 1 item

How to make manicotti crepes:

Crepes: Stir all together until smooth. Let stand for 1 hour. Melt a little butter in a 7-inch skillet. Add crepe batter to just cover bottom of skillet. Tilt to spread to edges. Cook until lightly browned and turn. Store crepes between layers of waxed paper to prevent sticking. Makes approximately 19 crepes.Filling:2 1/2 lb. ground meat2 eggs1 1/2 c. Ricotta grated Romano cheese to taste pinch of cinnamon1/2 c. bread crumbs2 tsp. garlic powder salt and pepper to taste Brown meat and drain any excess grease off. Mix all ingredients into cooked ground meat.

Fill and roll crepes. (At this point, you can put the manicotti on cookie sheets and freeze. Once they are frozen, put in freezer bag to use at a later date.)

To cook, cover bottom of baking pan with sauce and grated Romano cheese. Arrange one layer of manicotti in baking dish. Cover with sauce and Romano cheese. Bake 1 hour at 350°.
