  • eggs - 3 item
  • salt - 1/4 tsp
  • flour - 3/4 c
  • water
  • Parmesan cheese - 1/2 c
  • Ricotta cheese - 2 c
  • Mozzarella cheese, grated
  • spaghetti sauce or tomato sauce - 2 c

How to make manicotti crepes:

Crepes:3/4 c. water1/8 tsp. salt3/4 c. flour2 eggs Combine crepe ingredients and beat until smooth. Heat 5-inch skillet until moderately hot. Film with shortening. Ladle a few tablespoons of batter into skillet; tilt quickly to cover pan with thinnest possible layer. Cook until bottom is lightly brown and edges lift easily. Turn and cook other side. Should make about 12 crepes.

To make filling, beat eggs and combine both cheeses, sauce and salt. Spoon filling on each crepe and roll it. Cover bottom of 9 x 13-inch baking dish with half of sauce. Layer crepes and add rest of sauce. Sprinkle with Parmesan cheese. Bake at 350° for 30 minutes. Makes 6 servings, 2 crepes each.
