Lemon tea bread
Ingredients/Components
- sugar - 1 c
- milk - 1/2 c
- salt - 1/4 tsp
- flour
- baking powder
- shortening - 1/2 c
- large eggs - 2 item
- lemon juice - 2 Tbsp
- pecans, chopped - 1/2 c
- powdered sugar, sifted
- grated rind of 1 lemon
How to make lemon tea bread:
Lemon Glaze:1 c. powdered sugar, sifted2 Tbsp. lemon juice Beat shortening at medium speed with an electric mixer until fluffy; gradually add sugar, beating well. Add eggs, one at a time, beating after each addition.Combine flour, baking powder and salt. Add to creamed mixture alternately with milk, beginning and ending with flour mixture. Stir in lemon rind and pecans.
Pour into greased and floured 9 x 5 x 3-inch loaf pan. Bake at 350° for 50 to 55 minutes. Cool in pan on wire rack 10 to 15 minutes. Pour lemon glaze over bread.
Lemon Glaze: Combine sugar and lemon juice; stir until smooth.
