Lemon tea bread
Ingredients/Components
- sugar - 1 c
- chopped pecans - 1/2 c
- milk - 1/2 c
- salt - 1/4 tsp
- baking powder
- shortening - 1/2 c
- all-purpose flour
- large eggs - 2 item
- lemon juice - 2 Tbsp
- grated rind of 1 lemon
- Add eggs, one at a time, beating after each addition
- Lemon Glaze - 1 item
How to make lemon tea bread:
Beat shortening at medium speed with an electric mixer until fluffy; gradually add sugar, beating well. Add eggs, one at a time, beating after each addition.Combine flour, baking powder and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Stir in lemon rind and, if desired, pecans.
Pour batter into a greased and floured 9 x 5 x 3-inch loaf pan. Bake at 350° for 50 to 55 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 to 15 minutes. Remove from pan and let cool completely on a wire rack. Pour Lemon Glaze over bread.Lemon Glaze:1 c. sifted powdered sugar2 Tbsp. lemon juice Combine both ingredients, stirring until smooth. Yields 1/3 cup.
