Ingredients/Components
- sugar - 1 c
- cream cheese - 3 oz
- flour - 1 c
- butter - 1/2 c
- fresh lemon juice - 1/4 c
- large eggs, well beaten - 2 item
- Filling: grated rind of 1 lemon
How to make lemon tarts:
Filling: grated rind of 1 lemon1/4 c. fresh lemon juice1 c. sugar1/2 c. butter2 large eggs, well beaten Shells: Mix ingredients together with fork until dough forms. Divide dough into 24 parts. Press into small size tart pans with fingers. Bake in preheated 350° oven for about 12 minutes. The shells should be just barely brown. Cool.Filling: Mix lemon rind, juice, sugar and butter in top of double boiler over simmering water. Add beaten eggs and cook, stirring, for about 15 minutes, until mixture is thick. Cool; spoon into cooled shells. If desired, decorate each tart with a dab of whipped cream. Keep refrigerated. These also freeze well. Makes 24.
