Lemon meringue pie
Ingredients/Components
- sugar
- salt - 1/4 tsp
- flour - 3 Tbsp
- butter - 1 Tbsp
- cornstarch - 1/4 c
- water - 2 c
- cream of tartar - 1/4 tsp
- egg yolks, slightly beaten - 4 item
- freshly squeezed lemon juice - 1/2 c
- grated lemon zest - 1 Tbsp
- Combine flour, cornstarch, sugar and salt
How to make lemon meringue pie:
Make lemon filling in medium size pan. Combine flour, cornstarch, sugar and salt. Mix well. Gradually add water, stirring until smooth. Over medium heat, bring to boiling, stirring occasionally. Boil 1 minute until shiny translucent. Quickly stir some of hot mixture into egg yolks. Pour back into mixture and cook over low heat for 5 minutes, stirring occasionally. Remove from heat. Stir in lemon juice, lemon zest and butter. Pour into baked pie shell. Preheat oven to 400°.Meringue:4 egg whites1/4 tsp. cream of tartar1/2 c. sugar Beat egg whites with cream of tartar until frothy. Gradually beat sugar, 2 tablespoons at a time.
