Ingredients/Components
- sugar
- salt - 1/2 tsp
- flour - 1/2 c
- cornstarch - 2 Tbsp
- eggs, separated - 3 item
- boiling water
- lemon juice - 6 Tbsp
- grated lemon rind - 1 Tbsp
- baked pie shell - 1 item
How to make lemon meringue pie:
Combine 1 cup of the sugar, flour, cornstarch and salt in double boiler. Add boiling water, stirring constantly. Cook until smooth and thick. Cover; cook for 15 minutes. Beat egg yolks with the 1/2 cup sugar. Gradually pour the hot mixture over it. Cook 1 minute longer. Add lemon juice and rind just before removing from heat. Mix well. Cool. Pour into pie shell.
