  • sugar
  • salt - 1/2 tsp
  • flour - 1/2 c
  • cornstarch - 2 Tbsp
  • eggs, separated - 3 item
  • boiling water
  • lemon juice - 6 Tbsp
  • grated lemon rind - 1 Tbsp
  • baked pie shell - 1 item

How to make lemon meringue pie:

Combine 1 cup of the sugar, flour, cornstarch and salt in double boiler. Add boiling water, stirring constantly. Cook until smooth and thick. Cover; cook for 15 minutes. Beat egg yolks with the 1/2 cup sugar. Gradually pour the hot mixture over it. Cook 1 minute longer. Add lemon juice and rind just before removing from heat. Mix well. Cool. Pour into pie shell. Top with meringue of egg whites.
