Ingredients/Components
- white wine - 1/2 c
- broth - 3 c
- thinly sliced mushrooms - 1 c
- thinly sliced leeks - 3 item
- semolina pasta - 1 c
How to make leek soup:
Saute the leeks and mushrooms in olive oil. When soft, add to broth. Boil for 10 minutes and add white wine. Add pasta and simmer until cooked, approximately 7 to 10 minutes. Serve and sprinkle with Parmesan cheese.Recipe categories: Soups & stews, Onions, Stocks.
