Ingredients/Components

  • white wine - 1/2 c
  • broth - 3 c
  • thinly sliced mushrooms - 1 c
  • thinly sliced leeks - 3 item
  • semolina pasta - 1 c

How to make leek soup:

Saute the leeks and mushrooms in olive oil. When soft, add to broth. Boil for 10 minutes and add white wine. Add pasta and simmer until cooked, approximately 7 to 10 minutes. Serve and sprinkle with Parmesan cheese.
