Leek soup
Ingredients/Components
- milk - 1 c
- margarine - 5 Tbsp
- chicken broth - 6 c
- bay leaf - 1 item
- salt and pepper to taste - 1 item
- sliced carrots
- sliced celery - 1/2 c
- dill weed - 2 tsp
- diced raw potatoes - 5 c
- chopped leeks - 2 c
- diced ham optional - 1 item
- small can mushroom pieces with juice - 1 item
- diced parsnips optional - 1/2 c
How to make leek soup:
In a large kettle, saute leeks, mushrooms, carrots, celery and parsnips in margarine for 5 minutes. Add broth, dill weed, salt and pepper. Add potatoes and bay leaf. Cook until potatoes are tender. Remove bay leaf. Add milk and meat (if used).Recipe categories: Soups & stews, Onions, Stocks.
