Ingredients/Components
- cinnamon - 1 tsp
- eggs - 2 item
- flour - 7 c
- brown sugar - 2 c
- water - 1/4 c
- nutmeg - 1/4 tsp
- baking soda - 1/2 tsp
- powdered sugar
- cloves - 1/4 tsp
- honey
- slivered almonds - 1/2 lb
- candied cherries - 1/2 c
- white corn syrup - 1 tsp
- candied orange peel - 1/3 c
- candied citron - 3/4 c
How to make lebkuchen:
Icing:1 c. powdered sugar1 tsp. white corn syrup Cut or use food processor for fruits. Measure fruits and add almonds. Dredge with 1 cup flour. In Dutch oven, mix honey, brown sugar and water. Heat and boil gently for 5 minutes. Cool mixture. While honey mixture cools, sift dry ingredients 4 times. Use 6 cups flour to dredge fruits. Mix eggs, one at a time, into cooled honey mixture. Add fruits; knead and wrap in wax paper. Store in cool place for 2 to 3 days.Divide into fourths. Roll out into 8 x 14-inch or 8 x 16-inch rectangle size, 1/4-inch thick. Cut into 2-inch squares. Put squares on lightly greased cookie sheet. Bake for 15 minutes at 350°. Cool, then ice. Wrap in wax paper strips and store in airtight container with orange peel.
