  • cinnamon
  • brown sugar - 3/4 c
  • nutmeg
  • soda - 1/2 tsp
  • egg - 1 item
  • powdered sugar
  • sifted flour - 3 c
  • lemon juice - 1 Tbsp
  • cloves - 1/2 tsp
  • honey - 1/2 c
  • allspice - 1/2 tsp
  • dark molasses - 1/2 c
  • finely shredded lemon peel - 1/2 tsp
  • slivered blanched almonds - 1/2 c
  • chopped, mixed candied fruit and peel - 1/2 c
  • Stir in honey and molasses

How to make lebkuchen cookies:

Beat egg, add brown sugar and beat until fluffy. Stir in honey and molasses. Sift together dry ingredients and add to first mixture; mix well. Stir in fruits, peel and nuts. Chill several hours or overnight. On lightly floured surface, roll to 1/4-inch thickness. Cut in rectangles, 3 1/2 x 1/2-inch. Place on greased cookie sheet. Bake in moderate oven (350°) about 12 minutes. Cool slightly before removing from pan. Makes about 2 dozen.Glaze:1 egg white1 1/2 c. powdered sugar1/2 tsp. finely shredded lemon peel1 Tbsp. lemon juice Beat egg white slightly. Add remaining ingredients and beat until smooth. Brush on cooled cookies. Decorate with pieces of candied fruit. Very good!
