Ingredients/Components

  • salt - 1 tsp
  • cooking oil - 1/4 c
  • Worcestershire sauce
  • cloves garlic, minced - 2 item
  • onion, chopped - 1 c
  • black pepper - 1/2 tsp
  • green onions, chopped - 1 c
  • celery, chopped - 1 c
  • cayenne pepper - 1/4 tsp
  • thyme - 1 tsp
  • bell pepper, chopped - 1 c
  • converted rice - 1 c
  • peeled shrimp - 2 lb
  • smoked sausage, sliced - 1/2 lb
  • stock or water
  • can tomatoes, drained reserve liquid - 1 oz
  • boneless, cooked chicken, cubed - 1/2 lb

How to make jambalaya:

In a large Dutch oven, saute sausage until lightly browned. Remove from pot. Saute onion, bell pepper, celery, green onions and garlic in meat drippings until tender. Add tomatoes, thyme, peppers and salt. Cook 5 minutes. Stir in rice.

Mix together liquid from tomatoes, stock and Worcestershire sauce to equal 2 1/2 cups. Bring to a boil. Reduce to a simmer. Add raw shrimp, chicken and sausage. Cook, uncovered, stirring occasionally, for about 30 minutes, until rice and shrimp are done.
