Ingredients/Components

  • hot water - 5 bouillon
  • paprika - 1 tsp
  • dry white wine - 1/2 c
  • oregano - 1/2 tsp
  • pepper to taste - 1 item
  • olive oil - 2 Tbsp
  • salt to taste - 1 item
  • thyme - 1/2 tsp
  • onion powder - 1 tsp
  • ground coriander - 1/4 tsp
  • to 2 cloves garlic, minced - 1 item
  • smoked ham - 1/2 lb
  • sliced pepperoni - 1 pkg
  • boneless chicken - 1 lb

How to make chicken pepperoni:

Saute until lightly browned the ham, olive oil and pepperoni. Add and cook slowly until half done the chicken. Place mixture in crock-pot. Add remaining ingredients. Cover and simmer slowly for several hours until chicken is 2/3 done. Stock can be completed ahead of time. When cold, cover and refrigerate. Bring mixture to a boil before proceeding.

Add 2 cups converted parboiled rice. Mix the rice down into the liquid with a spoon. Let the mixture boil. Do not cover pan and do not stir the rice. When the rice has begun to swell and absorbed enough liquid so that it has risen to the surface, let it simmer for another 7 to 10 minutes or until the rice is tender. Cover the pan but do not stir the mixture. At the end of cooking all the liquid should have been absorbed. It can be served from the pot. Yield: 12 to 15 servings.
