Hot chicken salad
Ingredients/Components
- salt - 1 tsp
- lemon juice - 1 tsp
- butter, melted - 1/4 c
- can cream of chicken soup - 1 item
- mayonnaise - 3/4 c
- minced onion - 1 tsp
- celery, chopped - 1 c
- cooked rice - 1 c
- hard-boiled eggs, sliced - 3 item
- crushed potato chips - 1 item
- can sliced water chestnuts, drained - 1 item
- cooked chicken, chopped - 2 c
How to make hot chicken salad:
In a 2-quart casserole, stir together chicken, celery, rice, mayonnaise, onion, lemon juice, salt, water chestnuts, soup and boiled eggs. Drizzle melted butter over mixture. Sprinkle crushed potato chips over all. Bake at 350° for 35 minutes. Can be served on bed of lettuce or on hot rolls or bread. Serves 5 or 6.Recipe categories: Chicken, Main dish, One Dish meal.
