Hearty potato soup
Ingredients/Components
- milk
- salt - 1 tsp
- flour - 6 Tbsp
- water - 2 qt
- margarine or butter - 6 Tbsp
- pepper - 1/2 tsp
- onion, chopped - 1 item
- carrots, diced - 2 item
- medium potatoes, peeled and sliced - 6 item
How to make hearty potato soup:
In a large kettle, cook potatoes, carrots and celery in water until tender, about 20 minutes. Drain, reserving liquid and setting vegetables aside. In the same kettle, saute onion in butter until soft. Stir in flour, salt and pepper. Gradually add milk, stirring constantly, until thickened. Gently stir in vegetables. Add 1 cup of reserved liquid. Add more, if desired, until soup reaches desired consistency. Yields 8 to 10 servings or 2 1/2 quarts.Recipe categories: Lunch/snacks, Potato, Soups & stews.
