Hearty potato soup
Ingredients/Components
- milk
- salt - 1 tsp
- flour - 6 Tbsp
- butter - 6 Tbsp
- water - 2 qt
- pepper - 1/2 tsp
- onion, chopped - 1 item
- carrots, diced - 2 item
- celery stalks, diced - 6 item
- medium peeled potatoes, sliced - 6 item
How to make hearty potato soup:
In a large kettle, cook potatoes, carrots and celery in water until tender, about 20 minutes. Drain and reserve liquid and set vegetables aside. In the same kettle, saute onion in butter until soft. Stir in flour, salt and pepper. Gradually add milk, stirring constantly until thick. Gently stir in cooked vegetables. Add 1 cup or more of reserved liquid until soup is at desired consistency.
