Ingredients/Components

  • whole wheat flour - 2 c
  • ground cinnamon - 2 tsp
  • baking soda - 1 Tbsp
  • raisins - 1 c
  • pecans or walnuts, chopped - 1/2 c
  • eggs, beaten - 2 item
  • oil - 1/2 c
  • vanilla - 2 tsp
  • honey - 1 c
  • ground or grated carrots - 2 c

How to make healthy carrot bread:

Stir first 5 ingredients together. Blend next 5 ingredients in order given. Stir all together easily with minimum strokes. Turn into an oiled and floured baking ring. Bake at 325° for 1 hour or until knife inserted comes out clean.
