Healthy carrot cake
Ingredients/Components
- eggs - 4 item
- grated carrots - 3 c
- baking powder - 1 tsp
- baking soda - 1 tsp
- unsweetened applesauce - 1 c
- salt optional - 1/2 tsp
- whole wheat flour - 1/2 c
- cinnamon, ground - 1 tsp
- unbleached flour all-purpose
- sugar in the raw - 2 c
How to make healthy carrot cake:
In medium bowl, combine all dry ingredients. In large bowl, mix applesauce, eggs and grated carrots. Add dry ingredients. Mix with electric mixer for 2 minutes.Spray a Bundt pan or 2 loaf pans with Pam spray. Add cake mix to pan(s). Bake at 350° for 50 to 60 minutes until done. Cool on wire rack.
Mix 1/4 cup margarine or soft butter with 3 ounces cream cheese and 2 cups confectioners sugar. Frost cake.
