Ingredients/Components

  • sugar - 1 c
  • vanilla - 2 tsp
  • sour cream - 3/4 c
  • butter or margarine - 1/2 c
  • butter - 1/4 c
  • baking soda - 1 tsp
  • large eggs - 2 item
  • sifted flour - 1 c
  • pineapple juice - 1/4 c
  • rum optional - 2 Tbsp
  • can crushed pineapple, well drained reserve juice - 1 oz
  • buttermilk biscuit baking mix - 2 c
  • Stir baking mix, flour and soda together

How to make hawaiian pineapple cake:

Heat oven to 350°. Stir baking mix, flour and soda together. Beat sugar, sour cream, butter and vanilla together for 2 minutes. Add eggs and beat 1 minute. Add flour mixture and beat 1 minute longer. Mix in drained pineapple and rum and pour into a well-greased 9-inch Bundt pan. Bake for about 45 minutes or until tests done. Remove from oven and spoon half the glaze over cake. Let stand 10 minutes. Turn out onto serving plate and spoon remaining glaze over cake. Cool before cutting.Glaze:3/4 c. sugar1/4 c. butter1/4 c. pineapple juice2 Tbsp. rum (optional) In a saucepan, cook and stir sugar, butter and juice over low heat until sugar is dissolved and butter melted. Remove from heat and stir in rum.

Makes 10 to 12 servings.
