cinnamon - 2 tsp
eggs - 4 item
flour - 4 c
brown sugar - 2 c
butter - 1 c
soda - 1 tsp
molasses - 1 c
raisins - 1 lb
cloves - 2 tsp
grated nutmeg - 1 tsp
strong coffee - 1 c
currants - 1 lb

How to make molasses cake:

Mix all ingredients, first the sugar, butter and molasses. Add coffee and eggs, then spices, raisins, currants and flour. Can use all raisins; I like to substitute craisins for the currants. Bake at 350° about 50 minutes or 325° about an hour and 10 minutes. Test center. Bake in 8 x 12-inch dish or pan. This makes a large cake and will keep or freeze well. Good sliced and served with butter. Serves 40. Can freeze. Can do ahead.
