Molasses cake
Ingredients/Components
- cinnamon - 2 tsp
- eggs - 4 item
- flour - 4 c
- brown sugar - 2 c
- butter - 1 c
- soda - 1 tsp
- molasses - 1 c
- raisins - 1 lb
- cloves - 2 tsp
- grated nutmeg - 1 tsp
- strong coffee - 1 c
- currants - 1 lb
How to make molasses cake:
Mix all ingredients, first the sugar, butter and molasses. Add coffee and eggs, then spices, raisins, currants and flour. Can use all raisins; I like to substitute craisins for the currants. Bake at 350° about 50 minutes or 325° about an hour and 10 minutes. Test center. Bake in 8 x 12-inch dish or pan. This makes a large cake and will keep or freeze well.
