Ingredients/Components

  • eggs - 5 item
  • pkg - 6 oz
  • flour - 2 c
  • can sweetened condensed milk - 1 oz
  • ground almonds - 1/4 c
  • 4 oz
  • stick cold butter - 1 item
  • chocolate syrup, whipped cream and pistachios optional - 1 item

How to make pistachio cheesecake:

Combine flour and almonds; cut in butter until crumbly. Press onto sides and bottom of a greased 10-inch spring-form pan. Bake at 400° for 10 minutes.

In a large bowl, beat cream cheese, milk and pudding mix until smooth. Add eggs. Beat on low speed just until combined. Pour over crust. Place pan on baking sheet. Reduce heat to 350°. Bake for 55 to 60 minutes or until center is almost set. Cool on rack for 10 minutes. Carefully run knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. To serve, remove sides of pan. Slice cake. If desired, garnish cake with chocolate, whipped cream and pistachios. Yield: 12 to 14 servings.
