German potato salad
Ingredients/Components
- lean bacon - 1 lb
- potatoes - 1 item
- large onions, sliced lengthwise - 2 item
- vinegar - 1/3 c
- water - 1 c
- sugar - 1 Tbsp
- flour like Wondra, no lumps - 2 Tbsp
- salt and pepper - 1 item
How to make german potato salad:
Fill 3 1/2-quart pan with potatoes. Cook potatoes with jackets on until firm, but not mushy. Cook bacon until crisp. Drain. Saute sliced onions in bacon grease until golden brown. Add vinegar, water, sugar and flour. Stir until thickened. If too much grease, spoon off excess. Crumble bacon into mixture. Peel and slice potatoes, a few at a time, into mixture. Add salt and pepper to taste and mix. Repeat until all potatoes are sliced into mixture. Make the night before to enable flavor to go through potatoes. Reheat before serving, stirring to avoid sticking to bottom of pan.If you use a Corning Ware 10-inch frypan, it's great for reheating on top of stove, in oven or on barbecue.
