Ingredients/Components

  • grated Parmesan cheese - 2 Tbsp
  • Dijon mustard - 2 tsp
  • sliced green onions - 1/2 c
  • chicken broth - 2/3 c
  • garlic cloves, minced - 2 item
  • medium tomato, seeded and chopped - 1 item
  • uncooked angel hair pasta - 4 oz
  • olive oil or oil - 1 Tbsp
  • chopped arugula leaves or fresh spinach - 1/2 c

How to make garden fresh pasta:

Cook pasta to desired texture as directed on package. Drain. Keep warm. Meanwhile, heat olive oil in large skillet over medium heat. Add green onions and garlic. Cook until onions are crisp-tender, stirring frequently. Add pasta, tomato, chicken broth and mustard. Cook 2 to 3 minutes or until thoroughly heated. Remove from heat. Add arugula and Parmesan cheese. Toss. Serve immediately. Yields 6 (1/2 cup) servings.
