French onion soup

- onions, sliced thin - 5 c
- butter - 3 Tbsp
- black pepper - 1/4 tsp
- flour - 1 Tbsp
- beef broth - 3 (10
- water - 3 c
- bay leaf - 1 item
- to 8 slices French bread - 6 item
- Parmesan cheese - 2 Tbsp
- Swiss cheese, grated - 1 c
How to make french onion soup:
Melt butter in 4-quart pan. Add onions and pepper. Saute until golden brown. Sprinkle flour and stir until absorbed into onions. Cook 1 minute, stirring constantly with wooden spoon. Remove from heat. Gradually add broth, stirring constantly. Add water and bay leaf. Return to heat; bring to boil, stirring constantly. Reduce heat to low; cook uncovered 30 to 40 minutes. Discard bay leaf.Pour soup into ovenproof bowls on a jelly roll pan. Toast bread; place on top of soup (do not push into soup). Sprinkle with both cheeses. Place in 425° oven until cheese melts and turns golden. Serve immediately. Serves 4 to 6.
