Country vegetable soup
Ingredients/Components
- salt - 1 tsp
- pepper - 1/8 tsp
- chopped fresh parsley - 1/3 c
- bay leaf - 1 item
- can stewed tomatoes - 1 oz
- shredded cabbage - 1 c
- carrots, sliced - 2 item
- thyme - 1/2 tsp
- beef stock - 4 c
- small onions, chopped - 2 item
- medium potatoes, peeled and cubed 1/2 inch - 2 item
- fresh corn or 1 12 oz
How to make country vegetable soup:
In 4-quart microproof casserole, combine all ingredients except parsley. Cook covered on High (maximum power) 20 minutes. Stir. Cook on 50 (simmer) 20 to 25 minutes. Let stand 5 minutes. Discard bay leaf. Divide parsley into individual serving dishes. Ladle hot soup over parsley. Serve immediately with crackers or hard rolls.Total cooking time: 40 to 45 minutes. Makes 6 servings.
