  • salt - 1 tsp
  • flour - 1/3 c
  • butter - 1/4 c
  • water - 3 c
  • frozen peas - 1 c
  • bay leaf - 1 item
  • black pepper - 1/4 tsp
  • celery, diced
  • chicken
  • poultry seasoning - 1/2 tsp
  • large egg, beaten - 1 item
  • large onion - 1 item
  • carrots, cut in pieces - 1 lb
  • flaky pastry recipe - 1 item

How to make chicken pot pie:

In 5-quart Dutch oven, cook chicken (cut up), carrots, bay leaf, 1/2 teaspoon salt and water. Simmer 35 minutes. Drain and reserve liquid. Remove all skin and fat.

Heat oven to 400°. On lightly floured surface, roll pastry ball and fit into 10 x 13-inch baking dish. Brush shell with some beaten egg. Bake 10 minutes.

Saute onion and celery in butter until tender. Stir in flour, salt, poultry seasoning and pepper until well mixed. Gradually stir in 2 1/2 cups reserved broth. Cook until thickened, then add chicken, carrots and peas. Cover with top pastry cover. Brush with remaining egg mix. Bake 35 minutes.
