French fried zucchini
Ingredients/Components
- salt - 1/2 tsp
- egg, slightly beaten - 1 item
- vegetable oil - 1 item
- buttermilk baking mix - 3/4 c
- medium zucchini, cut into 1/2-inch slices - 3 item
How to make french fried zucchini:
Heat 1 inch of oil in 10-inch skillet to 375°. Mix baking mix and salt. Dip zucchini into egg; coat with baking mixture. Fry about 1/3 of the zucchini at a time, turning if necessary until golden brown, about 2 minutes. Makes 3 or 4 servings.French Fried Mushrooms: Substitute 8 ounces whole mushrooms for the zucchini.
