Ingredients/Components

  • oil - 2 Tbsp
  • chopped tomatoes - 1 c
  • onions, diced - 3/4 c
  • green peppers, diced - 1 c
  • 8 inch flour tortillas - 4 item
  • whole chicken breasts, split, boned and skinned - 2 item
  • Velveeta Mexican cheese with jalapeno peppers - 1/4 lb

How to make festive fajitas:

Cut chicken in thin strips. Saute in oil for 4 minutes. Add peppers and onions; mix together. Cook 5 minutes or until tender. Add Velveeta cheese cubes; stir until cheese melts. Fill tortillas with 1/4 of chicken mixture. Top with tomatoes; fold. Makes 4 servings.
