Eggplant dressing
Ingredients/Components
- chopped celery - 1/2 c
- ground beef - 1 lb
- small onion - 1 item
- cooked rice - 3 c
- green peppers - 1/2 c
- medium eggplant - 1 item
- Creole seasoning - 2 3
- garlic and hot sauce - 1/2 tsp
How to make eggplant dressing:
Microwave ground beef in 2-quart casserole for 5 to 6 minutes or until brown. Add onion, green pepper and celery. Cut eggplant in half. Remove pulp and finely chop. Add cut eggplant to meat mixture. Cover.Microwave 6 to 7 minutes or until vegetables are tender. Stir in remaining ingredients. Microwave 7 to 7 1/2 minutes on High until heated. Garnish with chopped onion greens.
